Heat a deep frying pan over medium heat. Add the butter once it’s hot.
When the butter has melted, add the Cosmic Crisp® apple, rhubarb, brown sugar, and water, then stir to combine.
Bring to a simmer and cook for about 15-25 minutes, stirring occasionally, or until the rhubarb has completely broken down and the apple is tender. The mixture should be a thick compote/sauce. Let it cool.
To serve, add the desired amount of ice cream to a bowl and top with the apple rhubarb topping. Drizzle with olive oil and a pinch of flaky salt to finish. Enjoy!
