Ingredients:⁠
⁠
• 375g Careme All Butter Puff Pastry (1 sheet)⁠
• 2 Cosmic Crisp apples, thinly sliced⁠
• 2 tbsp honey⁠
• 1 tsp fresh thyme leaves⁠
• 1 egg, lightly beaten (for egg wash)⁠
⁠
Method:⁠
⁠
1. Preheat the Oven⁠
Preheat your oven to 200°C (fan-forced). Line a baking tray with parchment paper.⁠
⁠
2. Prepare the Apples⁠
Thinly slice the Cosmic Crisp apples.⁠
⁠
3. Arrange the Apples⁠
Spread a thin layer of honey on the parchment paper. Arrange the apple slices evenly on top, slightly overlapping. Drizzle over a little more honey and sprinkle with thyme leaves.⁠
⁠
4. Place the Pastry⁠
Lay the puff pastry sheet on top of the apples.⁠
Gently press down the edges with a fork to seal.⁠
⁠
5. Egg Wash⁠
Brush the top of the pastry with beaten egg for a golden finish.⁠
⁠
6. Bake⁠
Bake for 20 minutes, or until the pastry is golden and cooked through.⁠
⁠
7. Rest and Flip⁠
Let the pastries rest for 15 minutes.⁠

• 1 Cosmic Crisp apple, unpeeled⁠
• 9 Medjool dates, pitted⁠
• 180g dark chocolate⁠
• 90g coconut oil (Copha)⁠
• 1 tbsp toasted flaked almonds (or your nut of choice)⁠
⁠
Method⁠
⁠
1. Prepare the Date Wrap⁠
Place a piece of plastic wrap on a flat surface.⁠
Squish the pitted Medjool dates onto the plastic wrap, ensuring they form an even layer around the size of the apple. Cover with baking paper and gently flatten the dates using a rolling pin or your⁠ hands to create a smooth, even sheet. The dates should be thin and wide enough to⁠ wrap the apple entirely.⁠

2. Wrap the Apple⁠
Once the date layer is flattened, place the whole Cosmic Crisp apple in the centre. Carefully wrap the flattened dates around the apple, ensuring it’s evenly coated. The dates should stick to the apple and form a chewy, smooth layer.⁠
⁠
3. Melt the Chocolate⁠
In a heatproof bowl, combine the dark chocolate and coconut oil (Copha). Melt together over a double boiler or in the microwave in 20-second intervals, stirring between each, until smooth and glossy.⁠
⁠
4. Coat the Wrapped Apple⁠
Carefully dip the date-wrapped apple into the melted chocolate, making sure it’s⁠ evenly coated. Allow any excess chocolate to drip off. There will be leftover chocolate, which can be⁠ stored for more toffee apples or other recipes.⁠
⁠
5. Top with Nuts⁠
While the chocolate is still wet, sprinkle the toasted flaked almonds (or any nut of your choice) over the chocolate coating, adding a crunchy texture.⁠

6. Set & Serve⁠
Place the chocolate-coated apple in the fridge for 15–20 minutes to set. Once the chocolate has hardened, slice the apple into wedges or bite directly into it for a fun, crunchy treat!

• 4 Cosmic Crisp apples⁠
For the buttermilk pancake batter:⁠
• 240g plain flour⁠
• 25g sugar⁠
• 1½ tsp baking powder⁠
• 1½ tsp bicarbonate of soda⁠
• ½ tsp salt⁠
• 590ml buttermilk⁠
• 2 large eggs⁠
⁠
For the cinnamon sugar:⁠
• 50g granulated sugar⁠
• 1½ tsp ground cinnamon⁠
• Extra virgin olive oil (for frying)⁠
⁠
For serving:⁠
• Greek yoghurt⁠
• Fresh apple slices⁠
⁠
Method:⁠
⁠
1. Prepare the Pancake Batter⁠ ⁠
In a large bowl, whisk together the plain flour, sugar, baking powder, bicarbonate of⁠ soda, and salt. Make a well in the centre and pour in the buttermilk. Crack the eggs into the well.⁠
Gradually whisk the wet ingredients into the dry, working outwards. Don’t overmix; some lumps are okay. Let the batter sit for 15 minutes.⁠

2. Slice the Apples⁠
While the batter rests, core the Cosmic Crisp apples and slice them into rings.⁠
⁠
3. Prepare the Cinnamon Sugar⁠
In a small bowl, mix together the granulated sugar and cinnamon. Set aside.⁠
⁠
4. Fry the Apple Rings⁠
Add a small amount of extra virgin olive oil to a non-stick pan over medium-low heat. Dip each apple ring into the pancake batter, ensuring it’s fully coated. Carefully place the battered apple rings in the pan and cook for 2–3 minutes per side⁠ or until golden brown. Flip gently. Repeat with the remaining slices, adding more oil if needed.⁠

5. Coat in Cinnamon Sugar⁠
While warm, dip each ring into the cinnamon sugar mixture so it sticks.⁠
⁠
6. Serve⁠
Serve immediately with a dollop of Greek yoghurt and fresh apple slices.

1. Core the apples, then slice each one in half.⁠

2. In a small bowl, combine the rolled oats, plain flour, cinnamon, brown sugar, melted butter and maple syrup.⁠

3. Mix until the oats are well coated and crumbly.⁠

4. Place the apple halves cut side up.⁠
⁠
5. Spoon the oat crumble generously over each apple half.⁠
⁠
6. Preheat the air fryer to 160°C.⁠
⁠
7. Place the apples in the basket, cut side up.⁠
⁠
8. Cook for 15–18 minutes or until tender and golden.⁠

9. Serve warm with a scoop of vanilla ice cream and an extra drizzle of maple syrup.⁠
