Serves: 6–8⁠
Ingredients⁠:
4 large Cosmic Crisp apples⁠
80g unsalted butter⁠
150g caster sugar⁠
1 tsp vanilla bean paste⁠
Pinch of flaky sea salt⁠
1 sheet all-butter puff pastry, thawed⁠
Vanilla ice cream, to serve⁠

Method⁠:
Preheat the oven to 200°C (180°C fan-forced).⁠
Peel the apples and cut them in half through the stem. Remove the cores with a melon baller or teaspoon.⁠
Place a 26cm ovenproof frying pan over medium heat. Add the butter and sugar. Cook, swirling the pan occasionally, until the sugar dissolves and turns a deep amber caramel.⁠
Stir in the vanilla bean paste and a pinch of flaky sea salt.⁠
Arrange the apple halves, cut-side up, snugly in the caramel, packing them tightly as they will soften during cooking.⁠
Cook over medium-low heat for 20–25 minutes, occasionally spooning the caramel over the apples, until they are just tender.⁠
Cut the puff pastry into a circle slightly larger than the pan. Lay it over the apples, tucking the edges down around the fruit with the back of a spoon.⁠
Bake for 30–35 minutes, or until the pastry is puffed and deeply golden.⁠
Rest for 5 minutes before carefully inverting onto a serving plate.⁠
Serve warm with a scoop of vanilla ice cream and spoon over any remaining caramel from the pan.⁠

Apple Filling⁠
1 large Cosmic Crisp apple, peeled and finely diced⁠
10g unsalted butter⁠
1 tbsp brown sugar⁠
½ tsp ground cinnamon⁠
1 tsp lemon juice⁠
Pinch of flaky sea salt⁠
30g digestive biscuits, finely crushed⁠
Cream Filling⁠
150g thick full-fat Greek yoghurt⁠
100g mascarpone⁠
2 tbsp icing sugar⁠
1 tsp vanilla bean paste⁠
To Assemble⁠
12 rice paper sheets⁠
Warm water⁠
Icing sugar, for dusting⁠
Method⁠
Melt the butter in a small frying pan over medium heat. Add the apple, brown sugar, cinnamon, lemon juice and salt. Cook for 3–4 minutes, stirring occasionally, until the apple is just tender. Transfer to a bowl and leave to cool completely.⁠
Once cooled, stir through the crushed digestive biscuits.⁠
In a bowl, combine the Greek yoghurt, mascarpone, icing sugar and vanilla until smooth. Cover and refrigerate for 1 hour, or until slightly firm.⁠
Dip one rice paper sheet into warm water for 2–3 seconds until just pliable and place onto a clean tea towel. Dip a second sheet and place it directly on top to create a double layer.⁠
Spoon about 2 tablespoons of the cream filling into the centre, then top with a generous teaspoon of the apple mixture.⁠
Bring the rice paper up and over the filling, pleating as you go to completely enclose it. Gently smooth the surface with damp hands if needed.⁠
Repeat with the remaining ingredients.⁠
Refrigerate for 30 minutes until the rice paper becomes soft and chewy.⁠
Dust generously with icing sugar just before serving.

2 Cosmic Crisp® apples⁠
150g tempura flour⁠
180–200ml ice-cold sparkling water⁠
Vegetable oil, for frying⁠
Cinnamon Sugar⁠
60g caster sugar⁠
1½ tsp ground cinnamon⁠
Salted Caramel Dip⁠
150g thick salted caramel sauce⁠
⁠
Method:⁠
Peel the Cosmic Crisp® apples. Cut each apple into four cheeks, removing the core, then slice each cheek into batons about 1cm thick. Pat dry well with paper towel.⁠
Heat 5–6cm of vegetable oil in a medium saucepan to 170°C.⁠
Place the tempura flour into a bowl. Gradually whisk in the ice-cold sparkling water until just combined. The batter should be the consistency of thickened cream. Don’t overmix—a few small lumps are perfectly fine.⁠
Working in batches, dip the apple batons into the batter, allowing any excess to drip off before carefully lowering them into the hot oil.⁠
Fry for 2–3 minutes, turning occasionally, until lightly golden and crisp. Transfer to a wire rack for 30 seconds.⁠
Combine the caster sugar and cinnamon in a shallow bowl. While still warm, toss the apple fries in the cinnamon sugar until evenly coated.⁠
If needed, stir the thickened cream through the salted caramel sauce until smooth and spoonable.⁠
Stand the apple fries upright in a small bowl or ramekin lined with baking paper and serve immediately with the salted caramel dipping sauce.

25g unsalted butter⁠
40g brown sugar⁠
1 tsp ground cinnamon⁠
¼ tsp ground nutmeg⁠
Pinch of flaky sea salt⁠
1 tsp vanilla bean paste⁠
2 tsp cornflour⁠
1 tbsp water⁠
1 tsp lemon juice⁠
Rice Paper Pastry⁠
6 rice paper sheets⁠
50g unsalted butter, melted⁠
2 tbsp raw sugar⁠
Vanilla ice cream, to serve⁠
Method⁠
Preheat the oven to 200°C (180°C fan-forced). Line a baking tray with baking paper.⁠
Melt the butter in a frying pan over medium heat. Add the apples, brown sugar, cinnamon, nutmeg, salt and vanilla. Cook for 6–8 minutes, stirring occasionally, until the apples are just tender.⁠
Stir together the cornflour and water until smooth. Add to the apples and cook for 1–2 minutes until the filling is thick and glossy. Stir through the lemon juice and leave to cool completely.⁠
Dip one rice paper sheet into warm water for 2–3 seconds until just pliable. Place onto a clean tea towel and lightly brush with melted butter. Dip and butter a second sheet, placing it directly on top.⁠
Spoon about 2 tablespoons of the cooled apple filling onto one half of the rice paper, leaving a 2cm border. Fold over the curved edge, fold in the sides, then roll over to completely enclose the filling. Press gently to seal.⁠
Repeat with the remaining rice paper and filling.⁠
Brush both sides generously with the remaining melted butter. Place onto the prepared tray and sprinkle with the raw sugar.⁠
Bake for 30–35 minutes, turning halfway through, until deeply golden, blistered and crisp.⁠
Leave to cool for 5 minutes before serving warm with vanilla ice cream.
