Directions

Soft, chewy rice paper filled with creamy vanilla mascarpone and buttery cinnamon Cosmic Crisp® apples. Inspired by the comforting flavours of apple crumble, these easy no-bake treats are finished with a dusting of icing sugar for a simple dessert that’s as delicious as it is fun to make.

  1. Melt the butter in a small frying pan over medium heat. Add the apple, brown sugar, cinnamon, lemon juice and salt. Cook for 3–4 minutes, stirring occasionally, until the apple is just tender.
  2. Transfer to a bowl and leave to cool completely.
  3. Once cooled, stir through the crushed digestive biscuits.
  4. In a bowl, combine the Greek yoghurt, mascarpone, icing sugar and vanilla until smooth. Cover and refrigerate for 1 hour, or until slightly firm.
  5. Dip one rice paper sheet into warm water for 2–3 seconds until just pliable and place onto a clean tea towel. Dip a second sheet and place it directly on top to create a double layer.
  6. Spoon about 2 tablespoons of the cream filling into the centre, then top with a generous teaspoon of the apple mixture.
  7. Bring the rice paper up and over the filling, pleating as you go to completely enclose it. Gently smooth the surface with damp hands if needed.
  8. Repeat with the remaining ingredients.
  9. Refrigerate for 30 minutes until the rice paper becomes soft and chewy.
  10. Dust generously with icing sugar just before serving.
