Preheat the oven to 200°C (180°C fan-forced).
Peel the Cosmic Crisp® apples and cut them in half through the stem. Remove the cores with a melon baller or teaspoon.
Place a 26cm ovenproof frying pan over medium heat. Add the butter and sugar. Cook, swirling the pan occasionally, until the sugar dissolves and turns a deep amber caramel.
Stir in the vanilla bean paste and a pinch of flaky sea salt.
Arrange the apple halves, cut-side up, snugly in the caramel, packing them tightly as they will soften during cooking.
Cook over medium-low heat for 20–25 minutes, occasionally spooning the caramel over the apples, until they are just tender.
Cut the puff pastry into a circle slightly larger than the pan. Lay it over the apples, tucking the edges down around the fruit with the back of a spoon.
Bake for 30–35 minutes, or until the pastry is puffed and deeply golden.
Rest for 5 minutes before carefully inverting onto a serving plate.
Serve warm with a scoop of vanilla ice cream and spoon over any remaining caramel from the pan.
