Directions

Crispy golden wonton wrappers filled with buttery cinnamon apples, air fried until perfectly crisp, then dusted with icing sugar and served with whipped vanilla mascarpone. Everything you love about apple pie in a shortcut dessert that’s ready in under 30 minutes. This recipe makes 16 pieces.

  1. Melt the butter in a frying pan over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg and salt. Cook for 5–6 minutes, stirring occasionally, until the apples have softened.
  2. In a small bowl, combine the cornflour and water. Stir into the apples along with the vanilla and lemon juice. Cook for 1 minute until the mixture is glossy and thickened. Transfer to a bowl and cool completely.
  3. Meanwhile, make the whipped vanilla mascarpone. In a bowl, whisk together the mascarpone, maple syrup (or icing sugar) and vanilla until smooth and light. Refrigerate until ready to serve.
  4. Place a wonton wrapper on a clean work surface. Spoon about 2 teaspoons of the cooled apple filling into the centre.
  5. Brush the edges with beaten egg. Fold into a triangle (or rectangle for a mini pie look), pressing firmly to seal and removing any air pockets.
  6. Lightly spray both sides with olive oil or brush with melted butter.
  7. Air fry at 190°C for 7–9 minutes, turning halfway, until golden brown and crisp.
  8. Arrange the warm wontons on a serving platter with generous dollops or a swoosh of the whipped vanilla mascarpone. Finish with a dusting of icing sugar and, if desired, a light sprinkle of ground cinnamon. Serve immediately while crisp.
