Cosmic Crisp® Apple & Cinnamon Cake

Ingredients

  • 2 large Cosmic Crisp® apples
  • 185g unsalted butter, melted and cooled slightly
  • 180g caster sugar
  • 2 large eggs
  • 2 tsp vanilla bean paste
  • 260g plain flour
  • 2 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 1½ tsp ground cinnamon
  • ¼ tsp freshly grated nutmeg
  • ½ tsp fine sea salt

Apple Topping

  • 1 Cosmic Crisp® apple, very thinly sliced
  • 1 tbsp caster sugar
  • ½ tsp ground cinnamon

To Serve

  • Whipped mascarpone
  • Icing sugar

Directions

Soft, buttery and filled with sweet grated Cosmic Crisp® apples, this simple one-bowl cake is finished with thin slices of apple and a sprinkling of cinnamon sugar for a beautifully caramelised top. Serve warm with whipped mascarpone for an effortless dessert or afternoon tea.

  1. Preheat the oven to 170°C fan-forced. Grease and line a 21cm round cake tin.
  2. Coarsely grate 2 apples, including the skin, discarding only the cores.
  3. In a large bowl, whisk together the melted butter, caster sugar, eggs and vanilla until smooth.
  4. Stir through the grated apple.
  5. Add the flour, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt. Fold gently until just combined.
  6. Spoon the batter into the prepared tin and smooth the surface.
  7. Arrange the thin apple slices over the top in a slightly overlapping pattern.
  8. Mix the caster sugar and cinnamon together and sprinkle evenly over the apples.
  9. Bake for 50–60 minutes, or until golden and a skewer inserted into the centre comes out clean.
  10. Cool in the tin for 15 minutes before transferring to a wire rack.
  11. Dust lightly with icing sugar and serve warm with whipped mascarpone.
