Cosmic Crisp® Apple Cinnamon Pancakes

Ingredients

  • 4 Cosmic apples
For the buttermilk pancake batter:
  • 240g plain flour
  • 25g sugar
  • 1½ tsp baking powder
  • 1½ tsp bicarbonate of soda
  • ½ tsp salt
  • 590ml buttermilk
  • 2 large eggs
For the cinnamon sugar:
  • 50g granulated sugar
  • 1½ tsp ground cinnamon
  • Extra virgin olive oil (for frying)
For serving:
  • Greek yoghurt
  • Fresh apple slices

Cosmic Crisp® apples are slow to brown and have a sweet-tangy flavour and a juicy crunch that takes these apple pancakes to the next level. They’re perfect for your next brunch!

  1. Prepare the Pancake Batter

    In a large bowl, whisk together the plain flour, sugar, baking powder, bicarbonate of soda, and salt.

    Make a well in the centre and pour in the buttermilk. Crack the eggs into the well.

    Gradually whisk the wet ingredients into the dry, working outwards. Don’t overmix; some lumps are okay. Let the batter sit for 15 minutes. 
  2. Slice the Apples

    While the batter rests, core the Cosmic apples and slice them into rings. 
  3. Prepare the Cinnamon Sugar

    In a small bowl, mix together the granulated sugar and cinnamon. Set aside. 
  4. Fry the Apple Rings

    Add a small amount of extra virgin olive oil to a non-stick pan over medium-low heat.

    Dip each apple ring into the pancake batter, ensuring it’s fully coated.

    Carefully place the battered apple rings in the pan and cook for 2–3 minutes per side or until golden brown. Flip gently.

    Repeat with the remaining slices, adding more oil if needed. 
  5. Coat in Cinnamon Sugar

    While warm, dip each ring into the cinnamon sugar mixture so it sticks. 
  6. Serve

    Serve immediately with a dollop of Greek yoghurt and fresh apple slices.
